How to make the authentic Melton Mowbray Pork Pie...

  • 1. Hand raise the pastry in the traditional way
  • 2. Use only the finest fresh pork, coarsely chopped
  • 3. Season with a secret blend of spices
  • 4. Seal and finish by hand
  • 5. Place in an oven without a supporting hoop or tin to create the distinctive bow-sided shape
  • 6. Bake until a rich golden brown. Cool, and fill with bonestock jelly.
  • 7. Wrap in parchment and seal with a crest
  • 8. And, of course, have a bakery that still demonstrates all of the above, actually in Melton Mowbray.
